Why Did You Decide to Become Vegan?

I’m not fully vegan, but I have a deep appreciation for plant-based food and the creativity it inspires. Many dishes from my Dhakni community are naturally plant-based, celebrating the vibrant flavors of vegetables, lentils, and spices. I’m passionate about showcasing how delicious and satisfying vegan versions of traditional recipes can be.

What’s Your Go-To Plant-Based Meal?

One of my absolute favorites is Baghara Baingan (spiced aubergine in a creamy sesame and tamarind sauce). It’s rich, flavorful, and pairs beautifully with steamed rice. This dish is proof that plant-based meals can be indulgent and satisfying—perfect for anyone exploring vegan cooking this Veganuary.

What Are Your Pantry Essentials for Plant-Based Cooking?

I always keep these staples on hand to whip up nutritious and flavorful dishes:

  • Dried lentils

  • Chickpea flour

  • Tamarind paste

  • Spices like mustard seeds, cumin, and turmeric

These are core ingredients in Dhakni cuisine, making it easy to create quick meals like dal, pakoras, or tangy curries that are naturally vegan.

What Inspired You to Start Hosting Vegan Supper Clubs?

My passion for sharing food and stories led me to host vegan supper clubs. I wanted to create a space where people could explore the rich flavors of Dhakni heritage, especially the lesser-known plant-based dishes. These events celebrate the versatility of vegetables, lentils, and spices, making my culture accessible and exciting to a broader audience.

What’s the Most Underrated Aspect of Vegan Cooking?

The versatility of spices is often overlooked. In Dhakni cooking, spices like mustard seeds, curry leaves, and asafoetida (hing) add depth and transform simple ingredients into extraordinary dishes. This shows that plant-based food doesn’t need meat or dairy to be bold, aromatic, and deeply satisfying.

What Do You Wish More People Knew About Vegan Food?
